Before we continue our bread and batter voyage into the world of pancakes, let’s veer off down this crescent-shaped side road right quick because every breakfast production has supporting cast and crew, each responsible for a little piece of the magic.

Enter: A serious, sturdy, dynamic member of the banana clan.

Plantain.

A world without it sounds like a joyless wasteland with few redeeming qualities. The Dustin Diamond of existences. So welcome to Plantain Week, dedicated to a versatile global favorite that brings joy at all stages of life, in all forms.

First up, caramelized plantains by Nashi Foods, a Panamanian writer, food photographer, and recipe developer. Most Latin American countries have their take on a sticky, sweet, ripe plantain moment. In Panama, you can find both delicious and disrespectful “plátanos en tentación” all day long, both as part of an ensemble or starring in a snack role.

If you see it on a menu, it’s usually a safe bet. Unless there are sunburnt “expats” in the kitchen. Then you’re on your own.
